Peanut Butter Pie

So I brought this delicious dish for a dinner get-together on Monday night and it was super yummy. So yummy I almost forgot why half of American women were on a lifetime diet.

FYI - I cheated with a premade pie crust. The awesome hubs ran out to the store after two attempts at a made-from-scratch one.

Peanut Butter Filling
8 ounces cream cheese, softened
1 cup peanut butter
1 cup sugar
2 tsp vanilla extract
1 cup heavy cream

Chocolate Topping
4 ounces semisweet chocolate, chopped
½ cup heavy cream
Reese's cups

Chocolate Pie Crust


Peanut Butter Filling
In a large bowl, using a mixer, beat the cream cheese with the peanut butter, sugar and vanilla extract until blended. In another large bowl, using an electric mixer, whip the chilled cream until firm. Fold one-third of the whipped cream into the peanut butter mixture to loosen it, then fold in the remaining whipped cream. Spoon the filling into the crust, smoothing the surface. Refrigerate uncovered for about 1 hour.

Chocolate topping:
In a medium glass bowl, combine the chocolate with the heavy cream and microwave at high power in 20-second intervals until the chocolate is just melted and the cream is hot. Stir the chocolate topping until blended, then let cool to barely warm. Spread the chocolate topping over the chilled peanut butter filling and sprinkle the Reese's cups on top. Chill until ready to serve.

Fall Fetish

Sorry I have been so super sketchy. This week has been pure craziness with a new job and the house buying process. We haven't had time to enjoy ourselves at all.

One thing I will say though, I am ready for some fall. You can't look anywhere without sweaters and corduroy pants slapping you in the face. Maybe when that first fall feeling comes, I can add these to my closet!

I can't decide on which black boots I like :( Both are cute and I need some flat black ones!

Same with these leopard flats/slippers. Love all the leopard this season!!!

Pimento Cheese

I love Pimento Cheese... case in point, I had it twice last weekend. Now, I used to hate the stuff. Maybe the texture or the thought of a cheese salad freaked me out, but now my taste buds think it is divine.

With all this spare time on my hands, I decided to make some for the hubs and I. Here is the Southern Living recipe: Pimento Cheese with a kick.

2 (8 oz) blocks extra-sharp Cheddar cheese, shredded
1 (8 oz) blocks mild Cheddar cheese, shredded
1 (8 oz) package cream cheese, softened
2 (7 oz) jars diced pimento, drained
1 (12 oz) jar roasted red bell peppers, drained
1/2 cup pickled jalapeno pepper slices, drained
1/4 cup mayo
2 tbsp Worcestershire sauce

My cheats: I bought the pre-packaged cheese because I was lazy and put in less pimento than called for.

- Process first 3 ingredients, in batches, in a food processor until well blended.
- Add pimento and remaining ingredients, pulse until desired consistency
- Cover and chill up to 1 day

You can so chill it up to 5 days. Don't be wasteful people :)

Mrs. Missoni

You may have already heard about Missoni's long awaited arrival to Targets nationwide, but I will tell you one more time.

My wallet will not allow for full price Missoni goods so my best friend Target has stepped up to the plate. I may be camped out on September 13th for my local store to open, don't judge.

Secrets Revealed

I really wasn't keeping a secret... I just needed a few days to let things happen before I could tell everyone.

I got a new job and start on the 22nd. I am super excited for new opportunities. Change is good just very intimidating.

And.... Aaron and I put an offer on a house. Fingers crossed that things work out because we are already in love with the property.

So... for the next few days, my schedule will be laying by the pool, trying out new pinterest recipes and some serious relaxation.

There may be some serious home decor/recipes/DIY posts coming very soon....


P.S. If you thought we were preggers, then sorry to disappoint. I am not pulling a Hilary Duff anytime soon :)

We had gazpacho in Spain and I fell in love. I love me some tomatoes so I knew I would love this.

4 tomatoes, cored and coarsely chopped
1/2 cucumber, peeled, seeded and coarsely chopped
1/2 onion, coarsely chopped
1 garlic clove
1/4 cup water
2 tbsp sherry vinegar
2 tbsp extra-virgin olive oil
salt and pepper

Puree tomatoes, cucumber, onion, garlic, water, vinegar, oil and salt in a blender or food processor until smooth. Season with pepper. Refrigerate for at least 45 minutes. Drizzle with oil and season with salt and pepper before serving.

Yummy vinaigrette

This vinaigrette recipe is some yummy stuff. I am so glad I finally found one I like. And look at the contraption I put it in.

Yep this bad boy was made for dressing and I finally put it to good use.

1 clove garlic
1 tablespoon Dijon mustard
1/4 teaspoon kosher salt
1/8 teaspoon pepper
1/4 cup red wine vinegar
1/2 cup extra virgin olive oil

(For the oil and vinegar - put your own measurements in until you get the taste you prefer)

  • Dice a clove of garlic.
  • Place diced garlic, 1 tablespoon Dijon mustard, 1/4 teaspoon kosher salt, 1/8 teaspoon pepper, 1/4 cup red wine vinegar, and 1/2 cup extra virgin olive oil in your container. 
  • Shake the jar to emulsify the ingredients. Taste and adjust quantities as desired. 

Vinaigrette can be stored in the refrigerator for up to 2 weeks.

Brain Dump

So this Williams clan has some very exciting updates to share but that will be revealed later next week...

In the meantime, my mind has been going 90 to nothing and here is just a little brain dump:

Fall is that light at the end of a long sweaty tunnel. But, we still have August people!!!

However, fall fashion is hitting the stores like crazy and it makes me itch for pumpkins, football and fall foliage.

Now this place of awesome-ness is opening it's Atlanta store in October and I can't wait. Now the hubs will think I am a weirdo for wanting to spend money on someone to style my hair, but it will be well worth it for that special occasion. Walk in like me, walk out like a supastar (a little exaggeration there) ....
I fell in love with Henri Bendel on my first trip to NYC and have been longing for our second date. I can predict our affair will continue with their store opening later this fall in Lenox Square mall. Let's say it all together now.... "accessories galore!"

Tibi has gone and done it again (that was super Southern)! They now have an outlet and that is bad news bears (the sayings are just flowing). This could be the worst possible thing with our house saving mode and my intense desire for a new wardrobe.

I wanna travel like everywhere. Any picture I come across it is added to my travel bucket list, and these coupon sites are making it much worse. I have been trying to convince the hubs for a worldwide, can't-pass-up vacation but my persausion skills seem to be wearing off. With all these Groupon getaways, Rue La La packages, Living Social escapes and vacations, I am in big trouble.

You may remember the previously mentioned Pinterest. Well I may need to be clinically diagnosed with a Pinning obsession. I seriously love this site. I mean if only my closet, house and pantry were as beautiful as all my pictures. Take a look.
