Our little crazy Winnie is having surgery today, the spaying kind that is. Say a quick prayer for not only our little "cray cray" but our vet because she is one crazy, hyper puppy.

Summer Dinner

Lately, I turn to my go-to recipe source, Pinterest. This was a great summer dinner and was relatively easy.

Grilled Bruschetta Chicken

Ingredients
  • 4 small boneless skinless chicken breast halves 
  • 1/2 cup Sun-Dried Tomato dressing, divided (I used a Wishbone Bruchetta Italian Dressing)
  • 2 tomatoes, finely chopped
  • 1/2 cup shredded part-skim mozzarella cheese
  • 1/4 cup chopped fresh basil
Directions
  • Place a large sheet of heavy-duty foil over half of grill grate; heat grill to medium heat. 
  • Place chicken in resealable plastic bag. Add 1/4 cup dressing and seal bag. Turn bag over several times to evenly coat chicken with dressing. Refrigerate 10 minutes. Remove chicken from bag; discard bag and dressing.
    Grill chicken on uncovered side of grill for about 6 minutes. 
  • Combine remaining 1/4 dressing, tomatoes, cheese and basil.
    Turn the chicken over and place cooked-side up, on foil on the grill. 
  • Top with tomato mixture. Grill 8 minutes or until chicken is done.

BLT Salad Recipe

Ingredients
  • 6 bread slices, cubed
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt, divided
  • 1 tsp freshly ground pepper, divided
  • 6 thick applewood-smoked bacon slices, chopped
  • 1 sweet onion, halved and sliced
  • 1 garlic clove
  • 1/2 cup mayonnaise 
  • 2 tbsp fresh lemon juice 
  • 1 pound assorted heirloom tomatoes, cut into wedges 
  • 1 (5-oz.) package arugula

Directions

  • Preheat oven to 400°.
  • Drizzle bread with oil; sprinkle with 1/2 tsp. each kosher salt and pepper. Bake bread in a single layer in a jelly-roll pan 12 minutes or until golden.
    Cook bacon in a skillet over medium heat, stirring occasionally, 10 minutes or until crisp. Drain on paper towels; reserve 1 Tbsp. drippings in skillet. 
  • Sauté onion in hot drippings over medium-low heat 3 to 5 minutes or until tender.
  • Smash garlic to make a paste. Whisk together mayonnaise, lemon juice, garlic paste, and remaining 1/2 tsp. each salt and pepper.
  • Toss together tomatoes, arugula, bacon, onion, and salt and pepper to taste in a large bowl. Pour mayonnaise mixture over tomato mixture, and toss to coat. Serve immediately with toasted bread.

Houzz envy

I love looking at interior design. I can't afford it, but I can look. Not going to lie, I have house envy sometimes.
This living room is the perfect mix of traditional with some contemporary thrown in (example: lucite table, animal stools and patterned chairs)

I love this bathroom; the floor is a-m-azing!

I could definitely work hard to attempt to fill this closet

Marble, chrome and wood makes the perfect bath palette.

This backyard is awesome. I love the covered cooking area and stone fireplace.

I don't know about you but I am sooooo glad it is Friday. The hubs and I finally have a weekend at home for the first time in over a month. Yippee!

Not that it will be relaxing though because we are heading down to Scott's Antique Market, Atlanta Farmers Market and more. Crossing my fingers to find some furniture!

Travel Bug

I have been bitten by the travel bug. (Which does anyone know where the origin of that phrase started?)

On a whim (and I would like to say too much cough syrup from my cold the other month)  I put in a bid on a vacay.... and won!

That conversation with the hubs was interesting.

But anywho, we are going to be in Vail for our second anniversary! Nope we can't ski yet but we can look at gorgeous scenery and have a little getaway. Sometimes you just need that. Also, neither of us have ever been to Vail so I wanted to go to a "new" place for the both of us.

So, keeping with the travel theme, I want to share some travel faves:

Luxury Link
This beauty of a site is where I got our deal...three nights in a luxury hotel with daily breakfast, all for around $300 for 2 adults. That was a no-brainer! This site is full of gorgeous properties. I have already eyed our next getaway :) You can buy through bidding on the package or by buying on the spot and my buying process is seemless. I will go ahead and say it,  "You're Welcome"...you have found a new travel fave :)

Trip Advisor
The hubs and I looked at Trip Advisor when trying to decide on our honeymoon location. They have reviews about hotels, restaurants and travel locations. Be advised that they have some very vocal feedback by travelers from all walks of life. I have learned that some people will always complain, no matter what. Every venue will have both positive and negative reviews but remember venues always change hands so it could be completely different for your trip.


Oyster
This site is a new found discovery. Oyster posts honest reviews and pictures of properties around the world. They send a photographer and take true pictures of the entire property. This means no more photo-shopped pictures from the mega-chain hotels. Want proof? Look at some of these fake photos by several properties.

Tomato Watermelon Salad

I made this yesterday for the 4th and it was soooo good. A great recipe for those summer cookouts.

Tomato-Watermelon Salad


Ingredients
5 cups, cubed watermelon
1 1/2 pounds ripe tomatoes, cubed
3 tsp sugar
1/2 tsp salt
1 small red onion, sliced and quartered
1/2 cup red wine vinegar
1/4 cup EVOO
Cracked black pepper to taste

Directions
- Combine watermelon and tomatoes in large bowl
- Sprinkle with sugar and salt
- Toss and let stand for 15 minutes
- Stir in onion, vinegar and oil
- Cover and chill 2 hours
- Sprinkle with cracked black pepper

Bauble Bar


I previously mentioned how much I loved my new spearmint bib. Well sad news, it didn't make our flight to the BVIs. I carefully wrapped it up but the beauty came out in several pieces. Seriously almost shed a tear.

This story gets better though...

 Bauble Bar is amazingly awesome and has already shipped a replacement. Casey in Customer Service rocked and was so helpful. 

I know where I will turn to for all my future jewelry needs :)
