Dekalb Farmer's Market

Last weekend I made the solo trek over to Dekalb Farmers Market. This is not your typical parking lot market. This Sam's Club size grocery store is unbelievable. If you can't find that bizarre type of squash here, then you can't find it anywhere. (Squash was the only random thing I could think of)

But... it is always a mad house. Last Saturday I should have prepared more, as in crossbody purse, running clothes and determination.

I also bought some fresh flowers during my visit. I am loving this simple arrangement of Stock, Tulips and Lisianthus and all for around $6.

Margarita!

Apparently today is National Margarita Day... my notification must have gotten lost in the mail. Thank goodness it's Friday because I may decide to celebrate this momentous day!

As much as I love a good Marg, I have been hooked on Champagne lately. Before you judge I am talking $4.99 Andre bubbly.

What's Up!

So I thought I would get back in the blogging swing of things after some work events... um no. House renos have been happening, my calendar is getting ugly busy and we have been enjoying some Atlanta-ness lately (this is the most consecutive weekends we have been in the same location since we have been married... yes that is 2.5 years).

In the meantime, we have been adding things right and left to the casa! I am so happy with the way things are turning out.
So the hubs asked me if all I do at lunch is shop. Not really but lately when I have a free hour, I use it to the fullest. That usually mean I make a quick stop at Home Goods.

Well thank goodness I did because I picked up these lamps the other day. I was literally about to order the same ones but I am glad I didn't. I got two for the price of one. I would say that was a successful lunch!

I made my first order on One Kings Lane and I am now in love. I snagged these X-benches for a killer price and they look perfect in our living room.

The hubs is apparently a blog reader as this gold spiny goodness appeared in my Valentines loot.

In preparation for some girlies to come my way in a few weeks, I have been stocking up on party supplies.... you know I am in love with a completely coordinated event :) Shop Sweet Lulu is my go-to supply store and Target has some great party products these days.

I am still salvaging a few blooms from my enormous bouquet. Soaking up every last bit of these beauties.

Reflections

Y'all! Target needs to stop with all this cuteness. I went in to get some shipping envelopes today and almost walked out with a new mirror.

Target has a new line, Threshold, and it is some cute stuff! I need a mirror for our bedroom and if Home Goods does not deliver I know where I am headed next!

Salmon with Champagne Sauce

I have tried to incorporate fish into each week's menu. Our local grocery store has some decent prices so that helps a ton. Here was last night's recipe from True Grits, one of the Junior League of Atlanta's cookbooks. My version was highly altered due to missing a few ingredients.
 
Start with 2 Salmon steaks and the following ingredients:

Sauce Ingredients
  • 2 tbsp butter
  • 1/4 cup shallot, chopped
  • 2 cups dry champagne
  • 2 cups whipping cream
  • salt and pepper
Nut Mixture Ingredients
  • 2 tbsp olive oil
  • 1 cup nuts (I used peanuts because that was all we had; recipe calls for pine nuts)
  • 1 cup packed fresh basil
  • salt and pepper

Directions  
Sauce Preparation:
  1. Melt the butter in a heavy skillet over medium heat. 
  2. Stir in the shallots. Saute for 3 minutes. Increase heat to high. 
  3. Stir in the Champagne. Boil for 10 minutes or until the liquid is reduced to 1/2 cup. 
  4. Add the cream; mix well. Cook for 8 minutes or until thickened and of sauce consistency, stirring constantly. Remove from heat. Season with salt and pepper.
  5. May cover and store in the refrigerator at this point for 1 day.  
Nut Mixture:
  1. Process the olive oil,  nuts and basil in a food processor until finely chopped. 
  2. Season with salt and pepper.
Salmon Preparation:
  1. Brush the steaks with the olive oil; sprinkle with salt and pepper. Arrange on a rack in a broiler pan.
  2. Broil for 3 minutes on each side or until the salmon flakes easily.
Assembly:
  1. Sprinkle the salmon with the basil- nut mixture, pressing gently to adhere.
  2. Bring the sauce to a simmer. Spoon the sauce onto plates; top with the salmon. (I put sauce on top)

Taunting me with Spring

So sometimes during lunch I find myself in the nearest mall. I rarely buy anything I just like to look. If you know me at all, you know I love to shop but can do an entire mall in less than an hour. I never grab anything off the rack unless it appeals to me enough to try it on. Hey I am a girl that knows what she likes.

Well lately I have been avoiding the mall at all costs. It is 31 degrees and they want me to buy shorts. And now, they are throwing bathing suits my way. Um I would look like a pale sausage at the beach right now.

I digress... here are some lovelies if I was to break down for some early Spring attire.

Randoms

Another new addition that Winnie just had to be pictured with... and we have threatened her life if she does anything to this rug. We got an awesome deal!

Our local grocery store had tulips for three dollars. So I maybe did buy myself two bunches. Fresh flowers are my weekly treat.

Baked Pickles

In honor of the Big Game, I made some baked pickles for the hubs and I to enjoy. They were quite yummy and a great alternative to the fried option.


Ingredients
  • 48 slices of pickles, drained and pat dry with paper towels
  • 1/2 cup flour
  • 1/2 cup beer
  • 1 egg, lightly beaten
  • 1 teaspoon creole seasoning 
  • 2 cups panko bread crumbs
Directions
  1. Dip the pickle slices in the mixture of the flour, beer, egg and creole seasoning, dredge in the bread crumbs and place on a rack on a baking dish.
  2. Spray the rack first because mine stuck during the baking process.
  3. Bake in a preheated 425F oven until golden brown and crispy, about 12-14 minutes.
